Cinnamon is sourced from the dried barks of various laurel tree in the cinnamon family. Cassia Cinnamon has a deep colour and spicy, woody flavour. It is suitable to be used in both savoury and sweet dishes. We carry two varieties of cassia; Indonesian and Vietnamese. Vietnamese cassia has a much higher level of volatile oil content and is far stronger than Indonesian, while Indonesian cassia is the standard common variety of cinnamon for everyday use.
